Slice off the top of the artichoke.
Trim the points from the leaves,
removing the very lowest ones
while leaving the stem.
Place artichoke on cooker stand
in a deep kettle with the small circle upright.
Add enough water to immerse the stem but not the base,
along with a squeeze of lemon juice and a dash of salt.
Bring to a boil. Cover and steam 35 to 45 minutes.
Artichoke is done when a
lower leaf can be pulled off with ease.
Cut off stem before serving.
