1 - medium - large sunburst yellow scallop squash sliced horizontally 1/4" 1/4C olive oil 2 cherry tomatoes per serving 1 large basil leaf per serving 1/8 C cheddar(or your favorite) cheese Cracked peppercorns Salt |

| Nice large squash ready for slicing |

| Brush with olive oil on both sides |

| Place slices on med-hot grill salt and pepper. Brush tomatoes with olive oil and place on grill |

| Brush basil leaves with olive oil |

| Pick up squash slice. Place basil leaf on grill for a few seconds. Place squash slice seasoned side down on leaf. |

| Flip squash slice and basil leaf. |

| Place grilled tomatoes on squash and basil leaf |

| Flatten cooked tomato with spatula |

| Sprinkle your choice of cheese on squash - basil leaf - tomato. You may want to put the grill cover on briefly to melt the cheese. You can use this as an appetizer or a luncheon entree |
